Clean Eating Vegan Cheesy Noodles

Lately, I have been OBSESSED with kelp noodles. For those who haven't tried help noodles, they are a must! They have hardly any calories in them (6 cals per servings) and they fill you up, just like regular noodles.
Usually, I like them thai style (recipe coming soon) but today, I decided I would try something a little different.

Vegan Cheesy Noodles
-Package of kelp noodles
-One or two vegan italian sausages
-Several cloves of garlic
-Nutritional yeast
-1/4 Cup water
-Salt, pepper, spices to taste

1) Start by soaking your kelp noodles. You really only need to soak them for about a half hour, but I like to soak mine overnight.
2) Drain and cut your kelp noodles into smaller lengths.
3) Roast your garlic cloves in the oven, until slightly soft
4) For sauce: combine garlic cloves, water, cubed vegan sausage, and nutritional yeast with salt/pepper/spices.
5) Warm them up or keep them cold.
6) Serve over kelp noodles.

Yields: 2-3 servings
