Beet & Sweet Potato Salad

Two of my favorite things in the entire world are beets and sweet potatoes. I found an idea for a sweet potato and beet salad and just had to try it!

This salad is definitely not for non-veggie lovers, because that's literally all it is.

Boil three beets and three sweet potatoes and then peel.

Chop them up into bit size pieces

Throw in salt and vinegar so they can start to marinade.

Mustard and garlic to taste (I obviously like a lot, but it is not necessary).

Saute a red onion and a red bell pepper. You don't need any oil for this, as long as you throw in a bit of water.

Mix in with your salad. You can add extra dressing if you want, but I think that the vinegar, mustard, garlic, and onions add enough flavor.
